As if Apple Cider Donut Oreos wasn’t enough (and sweet enough), what if we dipped it in batter and deep fry it and take it up another level. These treats take a spot on cookie and turn it into a fresh off the farm apple cider donut. It’s soft and pillowy (that’s a word right?) and inside is a perfectly soft melted Apple Cider Donut Oreo.

I used beignet mix instead of the traditional pancake mix because it offers a better donut like consistency. If you can’t find beignet mix in the grocery store, pancake mix works just fine. Once it’s deep fried, I lightly rolled in cinnamon sugar and topped with powdered sugar….because SUGAR.

Ingredients

  • 1.5 cups Beignet mix or pancake mix

  • 1 Egg

  • 1 cup Milk

  • 2 teaspoons oil (plus more for frying)

  • Cinnamon sugar

  • Powdered sugar

Directions

  • Preheat oil to 340 degrees.
  • Mix together the milk, egg and oil. Once mixed, add the wet to the dry beignet mix and whisk thoroughly.
  • Dip the cookie in the mix and flip using a fork. You only need a thin amount of batter. These will puff up and too much batter can result in raw batter inside.
  • Fry each cookie flipping often so it doesn’t sear and burn the batter.
  • Once cooked through, lightly mix in cinnamon sugar and set on a paper towel. Finish off with a dusting of powdered sugar.

Don’t forget the milk and enjoy! Questions? Let me know!
